Prep Time: 15 minutes
Cook Time: 20 minutes

Ingredients
- •1.5 lbs sirloin steak, cut into 1-inch cubes
- •1 large head cauliflower, cut into florets
- •4 tablespoons unsalted butter, divided
- •2 ounces cream cheese, softened
- •2 tablespoons heavy cream
- •4 cloves garlic, minced
- •1 tablespoon olive oil
- •2 tablespoons fresh chives, finely chopped
- •1 tablespoon fresh parsley, chopped
- •1 sprig fresh rosemary
- •1 sprig fresh thyme
- •1/2 teaspoon garlic powder
- •Sea salt and freshly cracked black pepper to taste
Instructions
- 1Place the cauliflower florets in a steamer basket over boiling water and cook for 10-12 minutes until very tender. Drain thoroughly and pat dry with paper towels to remove excess moisture.
- 2Transfer the steamed cauliflower to a food processor. Add 1 tablespoon of butter, cream cheese, heavy cream, garlic powder, salt, and pepper. Blend until completely smooth and velvety. Stir in the chopped chives and keep warm.
- 3Pat the steak cubes dry with paper towels and season generously with salt and pepper on all sides.
- 4Heat olive oil in a large cast-iron skillet over high heat until just starting to smoke. Add the steak bites in a single layer, ensuring they are not crowded to achieve a proper sear.
- 5Sear the steak for 2 minutes without moving them to develop a brown crust. Flip and cook for another 1-2 minutes for medium-rare.
- 6Reduce the heat to medium-low. Add the remaining 3 tablespoons of butter, minced garlic, rosemary, and thyme to the skillet.
- 7Toss the steak bites continuously in the melting garlic butter for 1-2 minutes, spooning the aromatic butter over the meat until fragrant.
- 8Remove the herb sprigs and serve the steak bites immediately over a generous portion of the creamy cauliflower mash. Garnish with fresh parsley.
