Ingredients
- •1.5 lbs sirloin steak, cut into 1-inch cubes
- •2 medium heads of broccoli, cut into small florets
- •4 tablespoons unsalted butter
- •2 tablespoons extra virgin olive oil
- •4 cloves garlic, minced
- •1 teaspoon kosher salt
- •1/2 teaspoon freshly ground black pepper
- •1/2 teaspoon crushed red pepper flakes
- •1/2 fresh lemon, juiced
- •1 tablespoon fresh Italian parsley, finely chopped
Instructions
- 1Preheat your oven to 400°F (200°C).
- 2On a large rimmed baking sheet, toss the broccoli florets with 1 tablespoon of olive oil, 1/2 teaspoon of salt, and 1/4 teaspoon of pepper. Roast for 12-15 minutes until tender-crisp and slightly charred on the edges.
- 3While broccoli is roasting, pat the steak bites thoroughly dry with paper towels. Season with the remaining salt and pepper.
- 4Heat the remaining 1 tablespoon of olive oil in a large cast-iron skillet over medium-high heat until it begins to shimmer.
- 5Add the steak bites to the skillet in a single layer, ensuring they do not touch. Sear undisturbed for 2 minutes to develop a deep brown crust, then flip and sear for another 2 minutes.
- 6Reduce the heat to medium and add the butter, minced garlic, and red pepper flakes to the pan.
- 7As the butter melts and foams, use a spoon to continuously baste the steak bites with the garlic butter for 1-2 minutes until fragrant.
- 8Add the roasted broccoli florets into the skillet and toss gently to coat every piece in the garlic butter and savory pan juices.
- 9Remove the skillet from the heat. Squeeze the fresh lemon juice over the steak and broccoli.
- 10Garnish with chopped parsley and serve immediately directly from the pan for a rustic presentation.
