The Petit Epicure Shokupan & Cacao Pairing
A masterclass in sophisticated flavors designed for a younger palate, this pairing features a triple-layered Shokupan 'Mille-Feuille' sandwich and a 'Golden Cacao Orb'. The sandwich consists of ultra-soft Japanese milk bread layered with a silk-textured organic honey-butter emulsion, 24-month aged Gruyère shavings, and a thin veil of artisanal white peach preserves to provide a gentle, natural sweetness that appeals to children without sacrificing complexity. The sweet bite is a thin-shelled Valrhona milk chocolate sphere filled with an airy whipped Madagascar vanilla bean ganache and a hidden center of effervescent strawberry 'stardust' for a playful sensory experience. Both items are designed for rapid, elegant assembly using pre-prepared gourmet components.
Recipe
Ingredients
- •6 thick slices of artisanal Shokupan (Japanese milk bread), crusts removed
- •100g organic unsalted cultured butter, softened to room temperature
- •30g organic wildflower honey
- •50g 24-month aged Gruyère, finely shaved with a microplane
- •40g artisanal white peach preserves, strained of large fruit chunks
- •4 pre-made Valrhona Jivara 40% milk chocolate hollow spheres (4cm diameter)
- •100ml heavy cream (min 35% fat)
- •50g Valrhona Ivoire white chocolate, finely chopped
- •1 Madagascar vanilla bean, split and seeds scraped
- •10g freeze-dried strawberry powder mixed with 5g unflavored popping candy
- •Optional: 24k edible gold leaf for decoration
Instructions
- 1To prepare the Vanilla Ganache, bring the heavy cream and vanilla bean seeds to a gentle simmer in a small saucepan. Pour the hot cream over the white chocolate and let sit for 1 minute before whisking until perfectly smooth. Chill the mixture in the refrigerator for at least 30 minutes.
- 2Once chilled, whip the vanilla ganache with a hand mixer until it reaches airy, soft peaks. Transfer to a piping bag fitted with a small plain nozzle.
- 3For the Golden Cacao Orbs, pipe the whipped ganache into each chocolate sphere until half full. Carefully spoon a small amount of the strawberry 'stardust' (strawberry powder and popping candy mixture) into the center. Top with more ganache to fill the sphere, then seal the small opening with a tiny drop of melted milk chocolate. If desired, apply a small flake of gold leaf to the top.
- 4For the Honey-Butter Emulsion, vigorously whisk the softened butter and wildflower honey together in a small bowl until the mixture is pale, light, and doubled in volume.
- 5To assemble the Shokupan Mille-Feuille, take one slice of bread and spread a thin, even layer of the honey-butter emulsion. Cover with a delicate layer of Gruyère shavings. Spread a thin veil of peach preserves on the second slice and place it face-down on the cheese. Repeat the layers once more to create a three-slice stack.
- 6Lightly compress the sandwich with a clean weight for 2 minutes to set the layers. Using a serrated knife, trim the edges to ensure clean white borders and slice the sandwich into three elegant rectangular batons.
- 7Place one Shokupan baton and one Golden Cacao Orb on a chilled porcelain plate. Serve immediately to ensure the 'stardust' provides a fresh effervescent sensation.
